The Whole leg is fantastic and can be kept in its entirety or the Shank can be taken off, or the Chump (similar to a rump) can be removed and both can be bought separately – please see order form.
The whole leg can be roasted (though is a little harder to carve than off the bone) but has a beautiful flavour from being cooked on the bone. It can be cooked long and slow as well and will just melt off the bone.
We butcher every week and so if we do not have your cut in stock it will be available with the next week’s butchery and we only charge you for the exact weight of your cut – not an average weight.
