Kid offal is absolutely delicious. The kidneys are sweet and tender and perfect for devilled kidneys. The liver can be used for a pate or marinated and fried. The heart (featured above) is as good as a steak, simply ‘butterfly – cut open down the middle to open up the meat’ and trim and then fry in butter.
Offal is always available but is normally frozen upon butchery – this will keep it very fresh as it doesn’t have a long use by date.
